I held the first Trini Flamingo Pop Up in October 2021 and had amazing support from friends and family, as well as the local community in New Eltham, London SE9.
The food and cooking was easy in comparison to the fear of hosting my own event! Would it work? Would people like the food? Did we have any spoons?!
We served three courses, decorated the room and tables with tropical flowers, flamingos and pineapples and played some chilled music to help relax our guests, especially with the last 18 months of almost surreal of times.
As it turns out, I had some amazing help from friends – and even their children! On the day, I loved seeing people enjoy the food, telling them about what it means to me and creating a tropical atmosphere for a couple of hours in autumnal London… oh yeah… and there were enough spoons!
